Healthy Crunchy Granola

Looking for healthy granola.  Look no further.  Low sodium, low sugar, low fat granola is here and super simple to make.

1 cup or 2 (1/2 cup containers) of unsweetened applesauce
2 TBSP of honey
2 TBSP of cinnamon
2 TBSP of vanilla
1 TBSP of pumpkin pie spice
Dash of ginger
Dash of nutmeg 

1 cup of chopped nuts (pecans, walnuts, sliced almonds or a mixture of all 3)
3 cups of old fashioned oatmeal (not instant)
1-2 TBSP of mini dark chocolate chips (if desired)
Canola oil spray 

Mix the top 7 ingredients in a large bowl.  The add the nuts and oatmeal and chocolate (if desired)

 Step 3: Add oats and any optional mix-ins.

 Place on tray and bake 20 minutes, then stir.  10 more minutes, then stir and finally 10 more minutes with a final stir.  Cool.

Spread onto a lightly sprayed jelly roll pan or cookie sheet with edges and place in preheated oven at 350 degrees.  Set timer for 20 minutes-remove and stir.  Put back in oven for an additional 10 minutes, then stir and repeat for another 10 minutes.  (40 minutes total).  Stir one last time, turn off oven and place back in hot oven for another 3-5 minutes.  Be careful because it can burn at this point even with oven off.  This helps to make it super crunchy. If you don't like it real crunchy then skip this final step.  
Remove from oven and let cool for 45-60 minutes.  Then package in an airtight container.  Will last 5-7 days.
